Traditional chefs bearing ancestral wisdom
Oaxaca cuisine maintains its essence through its women and local cultural groups. We will gain an insight into this with Celia Florián and Rosario Cruz.
They cook local produce in Oaxaca, but importance must also be attached to a range of cooking techniques, the procurement of products, the procurement of insects, or the preparation of recipes in accordance with seasonal criteria.
And the women who keep this legacy current and ongoing and convey their knowledge from generation to generation are the traditional cooks. Celia and Rosario will be the mouthpieces for this ancient culture at FéminAS, to give us an insight into the essence of Oaxaca cuisine, one of Mexico's most famous.
